Roasted Sheet Pan Vegetables

Ingredients:

  • 1-2 zucchini, peeled and chopped
  • 1-2 carrots, diced
  • 1 red onion, sliced
  • 1 red bell pepper, sliced
  • 1 cauliflower or broccoli or Brussel sprouts cut into small florets (I use what vegetables I have on hand, especially if they are past peak)
  • ½ cup olive oil or melted coconut oil
  • 2 cloves garlic, minced
  • salt and pepper to taste
  • Optional seasonings: 1 tsp dried rosemary,1 tsp dried thyme, 1 crushed bay leaf, 1 tsp dried oregano, 1 tsp chili flakes, and/or 1-2 Tbps balsamic vinegar and/or 1-2 Tbsp maple syrup

Instructions:

    1. Heat oven to 395 degrees F.
    2. Cut vegetables into bite size pieces
    3. Add salt and pepper and seasonings of choice.
    4. Drizzle oil on top, mix together.
    5. Put in oven 45-60 minutes, until tender and serve alongside protein of choice.

Makes 2-3 servings.
