Roasted Sheet Pan Vegetables
Ingredients:
- 1-2 zucchini, peeled and chopped
- 1-2 carrots, diced
- 1 red onion, sliced
- 1 red bell pepper, sliced
- 1 cauliflower or broccoli or Brussel sprouts cut into small florets (I use what vegetables I have on hand, especially if they are past peak)
- ½ cup olive oil or melted coconut oil
- 2 cloves garlic, minced
- salt and pepper to taste
- Optional seasonings: 1 tsp dried rosemary,1 tsp dried thyme, 1 crushed bay leaf, 1 tsp dried oregano, 1 tsp chili flakes, and/or 1-2 Tbps balsamic vinegar and/or 1-2 Tbsp maple syrup
Instructions:

- Heat oven to 395 degrees F.
- Cut vegetables into bite size pieces
- Add salt and pepper and seasonings of choice.
- Drizzle oil on top, mix together.
- Put in oven 45-60 minutes, until tender and serve alongside protein of choice.
Makes 2-3 servings.
