Mexican Shrimp Cocktail
This recipe is perfect for a light and refreshing appetizer or snack.
Ingredients:
- 1 pound medium shrimp, raw or cooked
- salt – kosher, canning/pickling or sea salt
- 1 cup chopped red onion
- 1 cup peeled, diced cucumber
- ½ cup chopped celery
- 1 jalapeno, minced (add more if want it more spicy)
Instructions:
1. Peel and de-vein the shrimp if necessary.
2. In a large bowl, combine the shrimp, red onion, cucumber, celery, and jalapeno.
3. Squeeze a sliver of fresh lime juice over the mixture and sprinkle with kosher salt to taste.
4. Cover and refrigerate for at least 30 minutes to allow the flavors to meld.
5. Serve chilled, garnished with additional lime wedges, salt, and your choice of tortilla chips (ideally homemade using nixtamalized corn flour and coconut oil) or sourdough crackers
