Scrambled Eggs with Cheese
Ingredients:
- 2 eggs, large, ideally grass-fed
- ½ T coconut oil
- salt and pepper to taste
- 1 oz cheese, I like feta or mature cheddar
- 1 piece bread, ideally sourdough
Instructions:
1. Crack eggs open in a small bowl. Add salt and pepper to taste and mix thoroughly.
2. Heat coconut oil in frying pan on medium heat. Once oil is melted, pour egg mixture into pan.
3. As eggs cook, mix with spatula. When almost finished cooking through, add cheese.
4. Serve immediate with bread/toast.
Makes one serving.
