Fruit Skewers with Chocolate Drizzle

  Ingredients:
 
  • 6 strawberries, hulled
  • 1 orange, peeled, segmented and cut in half
  • ½ of a ripe pineapple, peeled, cored and cut into 1-inch chunks (about 1 ½ cups pineapple chunks)
  • 1 banana, cut into 1-inch sliced
  • 2 kiwi fruit, peeled and cut into 1-inch chunks
  • 1 bar of semi-sweet or dark chocolate (ideally lecithin-free, I like 70% Lindt),  vegan or dairy free if desired
  • Optional: flaky sea salt
  • Instructions:

    1. Arrange fruit on skewers (you can do it in order to get a rainbow effect).
    2. Melt chocolate in microwave – break into pieces and microwave in 30 second increments until melted.
    3. Optional: Grill skewer to caramelize the fruit sugars.
    4. Drizzle with chocolate.
    5. Optional: Refrigerate or freeze for a few minutes for chocolate to harden.
    6. Serve and enjoy
