Cottage Cheese

Quick and easy recipe, no additives!

Ingredients:

  • cups milk, ideally whole (for best results), organic or grass-fed
  • 1/2 cup vinegar
  • pinches salt, to taste

Instructions:

1. Pour milk into a small pot; warm to 120 degrees F.  Add vinegar and remove from heat. Stir mixture slowly until curds form, 1 to 2 minutes.

2. Pour mixture into a colander lined with cheesecloth. Allow liquid whey to drain off as curds cool, about 15 minutes. Season curds with salt.

3. Blend if desired.

Makes 6 servings.
