Ingredients

  • 2 eggs

  • ½ cup sugar

  • 1 tsp vanilla

  • ½ tsp peppermint extract (optional – can use vanilla if you prefer)

  • ¾ cup white flour

  • ½ cup whey protein isolate

  • 2 tbsp cocoa powder

  • 1 tsp baking powder

  • Pinch salt

Instructions
1. Bake loaf at 350°F for 25 minutes, slice, then rebake slices 10 minutes per side until crisp.

2. Optional: Drizzle with or dip into melted white/dark chocolate and sprinkle with crushed candy canes/mints before serving.
