½ tsp peppermint extract (optional – can use vanilla if you prefer)

¾ cup white flour

½ cup whey protein isolate

2 tbsp cocoa powder

1 tsp baking powder

Pinch salt
Instructions
1. Bake loaf at 350°F for 25 minutes, slice, then rebake slices 10 minutes per side until crisp.
2. Optional: Drizzle with or dip into melted white/dark chocolate and sprinkle with crushed candy canes/mints before serving.
