Ingredients

1 cup low-fat cottage cheese (blended smooth) or Greek yogurt

2 eggs

⅓ cup blackstrap molasses or honey

2 tbsp melted butter or coconut oil

¾ cup white flour

½ cup whey protein isolate

1 tsp baking powder

1 tsp ginger
-
1 tsp cinnamon

¼ tsp cloves

¼ tsp salt
Instructions
1. Blend cottage cheese until smooth. Or use Greek yogurt instead.
2. Whisk in eggs, molasses and coconut oil/butter.
3. Fold in dry ingredients until well incorporated. Don’t overmix.
4. Pour into greased loaf/muffin pan.
5. Bake at 350°F (175°C) for 40-50 minutes (for a loaf) or 18–22 minutes (for muffins).
